If you want some excellent soul food, this is the place to go! The cauliflower was my fav… this shiz could put KFC out of biz in my opinion!! Holy YUM! Thad really loved the Mac & Cheese! He said it was as close to his Mom’s as he’s had! That’s BIG praise! Soul food vegan is good for your soul for sure!

Da Munchies: Dallas, TX

I admit, I wasn’t sure what to expect with this one… but holy hell the food was SOOOOO good!!! Thad had chicken & gravy and it was the best gravy I’ve ever had. I had chicken tenders & fries from the kids menu and once again….. fried food for the WIN! Fried chicken REALLY is better in the South!

Veggie Express: Frisco, Texas

I admit that Chinese food isn’t my all time fav but Thad loves it! He’s far more adventurous than I am so I almost always get fried rice…. which I did, and it was delicious! Thad had Kung Pao beef which looked awesome and Thad loved it! Every single thing in the restaurant is vegan so nothing to worry about!

The faux meats would “fool” any carnivore so this is a great place to bring your parents who can’t believe you’ve turned to the vegan dark side… in fact, don’t even tell them it’s vegan. The menu uses all the “meat” instead of veganized words so they’ll never know that it’s faux… errr, I mean KIND! 😉

If you’ve ever considered living in an RV or a tiny home, there are some things to consider that you may not have thought of…. I know I certainly didn’t!

Here are a few things that I’ve learned from living in the RV these past 4 months…. 

1 If you stop at a gas station to use the bathroom and they hand you a block of wood attached to a key and tell you it’s out back… don’t go. Just don’t. Gross.

2 When living in a small space…. DO NOT go to Homegoods, At Home, or Target without a list. And stick to the list because whatever it is… you DON’T need it. You really don’t. And it won’t fit anyway.

3 Water really is a precious commodity. We are truly blessed in this country to have running water available. When you live in an RV and have to fill your water tank, AND dump your grey water tank… you learn quickly to conserve.

4 When you flush the toilet, it’s gotta go somewhere. Lucky for me, Thad handles all the “dumping” of tanks, but seriously… what a blessing indoor plumbing is. ***This is why you learn to use the bathroom everywhere else so you don’t fill your own tank as quickly.*** (Did you know they call the tube used to drain the toilet tank a “stinky slinky?” lol. Gross!)

5 America is stunning and there is more to see than anyone would ever have time for. Go see as much as you can because it’s truly worth it. (My fav is still Mt. Rushmore.)

6 Ya better love the person you travel with because you are together in a small space all the time! If you’re not married to your BFF, you need to do some relationship work before venturing into a tiny home! 7 It’s hard to get deliveries when you have no address but many post offices offer “general delivery.” That means you can send a package to a post office and go there to pick it up. Just call the PO first to make sure they offer the free service.

8 Staying connected is super important. It can feel a little lonely when you are away from friends and family for an unknown amount of time. Remind your friends that you’ve moved, not moved ON and encourage them to reach out and say hello!

9 You really can work from anywhere! I am writing this in the RV somewhere in Virginia while Thad drives. Thank god for hot spots and wifi! If you want to learn more about becoming financially free enough to travel and work from anywhere, send me a message and let’s set up a free call!

10 You need more than yoga to be flexible! You’ve got to be willing to be flexible enough to change your mind about where you going or when you’ll arrive, and where you’re gonna sleep each night! Thank god for Cracker Barrels because they have designated RV spaces and allow overnight parking at all of their restaurants for free… and it’s way better than a Walmart parking lot- trust me!

Yummm! No seriously…. Southern food veganized? Oh hell yea! I had the chicken fried steak fingers basket and Thad had a Cuban with a side of mac n cheese. I wish we had longer so we could have gone several more times to try everything because what we had was AWESOME!

Louisville Vegan Jerky: Louisville, KY

So this company used to run our fav cafe in Louisville but their vegan jerky was SO good that it got super popular and they had to shut down the cafe in order to keep up with jerky sales!

Even those the cafe is gone, they still operate a space out of the Logan Street Market where you can get jerky, burritos, sweet treats and more. I would very HIGHLY suggest you get the chicken salad. It is by far the BEST I’ve ever had and I would sell one of my kids for a limitless supply!

A nice place for a group that has vegans and non-vegans! We ate there twice while in Louisville with our Firewalk fam. I had a vegan breakfast taco and Thad had a big ‘ol bowl of oatmeal!

FULL VEGAN:

Eden Burger: Columbus, OHRvegan_logo_star3

OK… to date… this is my FAV restaurant for burgers and fries! Holy crap. When I tell you these are the BEST french fries I’ve had in America, I am not exaggerating! They are hand cut, fried to perfection, and sprinkled with Unicorn dust… ok, so maybe it’s just garlic powder?

Being raised in Germany until I was almost 11, I know french fries aka pomme frittes. We used to get them from trucks on the side of the road in Germany and they served them in paper cones with a side of mayo. These fries took me right back to that warm childhood memory!

The burgers and mac were also bomb ass good but it’s the fries that stole my heart! Eden Burger has me thinking that maybe we need to land in Ohio at the end of this year long trip!

Portia’s Cafe: Columbus, OH

Total yum and easy for anyone to find something here! I especially loved their breakfast sandwich! This is a “healthier” vegan place with many raw options and they have a full menu with loads to choose from! Thad LOVED Portia’s!

VEGAN OPTIONS AVAILABLE:

Ikea: Columbus, OH

While I wouldn’t go to Ikea specifically for dinner, it is nice that we could eat there should we find ourselves hungry while looking for build-it-yourself furniture! Seriously, though… Ikea is awesome and if you’ve never been- plan a trip! Be prepared to take a bunch of cool insta photos too! lol

We tried their vegan meatballs and though bland, again, it was nice to have an option. They were served with quinoa and green beans and with the addition of salt and pepper, they were fine. They also normally carry a vegan hot dog but due to a manufacturing back up, they are out until they can produce more.
